Lime Marmalade by Mrs Oldbucks Pantry

The quaint town of Berrima is always worth a visit when you brave the cold of the Southern Highlands or travel on to Canberra. There is a collection of quaint shops including antiques, giftware and yes.. a shop jam- packed with just that!! Jams and preserves, teas and collectibles that would keep you busy rummaging for hours.

The friendly staff helped me choose some teas as well as a marmalade to take back home.

I have had it in my head to cook a big bread and butter pudding for our next family gathering and lace it with marmalade. So after tossing up between the fourteen marmalades available I chose lime as I thought it would accompany the dried dates which one of the daughters loves.

The good news is you don't have to travel to Berrima to stock up as they have an online shop or mail order service. They pack everything well and add a stylish touch! Great gift idea, consummables as yummy as these will always be popular.

IN A PICKLE RECIPE USING LIME MARMALADE BY MRS OLDBUCKS

COCONUT BREAD AND BUTTER PUDDING WITH LIME AND DATES

You need:

You need:
4 croissants or 1 brioche loaf (cut into slices)
1/2 cup Mrs Oldbucks Lime Marmalade
3/4 cup sweetened condensed milk or Coconut Cream for the adventureous
6 eggs
3 cups thickened cream
1 vanilla bean or equivalent in vanilla paste or grated rind of a lime if you used the coconut cream
1/2 cup dates sliced
1/2 cup toasted shredded coconut

Method:
Slice croissants in half, lengthways.
Spread marmalade across croissants/brioche, then roughly chop. Place into an attractive, shallow ovenproof dish. Combine the milk, eggs, cream and vanilla, pour over the croissants.
Sprinkle with dates. Bake in an electric oven 180 degrees c for 40 minutes or until set. Dust with icing sugar and the toasted coconut. Serve warm with cream.
